Foods rich in fiber can neutralize the harmful effects: fresh vegetables, fruits, bread with bran. They are associated with carcinogens. Source of carcinogens in fried potato chips and crackers are carbohydrates. When heated they emit specific substances – acrylamides. They increase the risk of developing cancer. If the potatoes are roasting in red, it means that they contain acrylamide. The most concentrated is the substance in chips and fries.
